I like making as much homemade food as possible before a camp trip.
Homemade almond milk is easy, it tastes amazing - but only keeps for a few days. Perfect for a weekend trip...bring along some store bought for longer trips.
1 cup of raw almonds
3 cups of filtered water (plus more for soaking)
1 tsp vanilla extract (or two vanilla beans)
1/2 tsp of cinnamon
Optional add-ins for sweetness
3 pitted dates
1 RIPE banana
1/2 tsp sugar ( or coconut sugar)
Place the almonds in an airtight container and soak in water at least 8 -but up to 48- hours ( i usually do 48 hours, i think it gives the milk a richer taste)
When done soaking, rinse the almonds well and discard the soaking water. Place almonds in blender with 3 cups of water. Blend very well, until you have milk. Strain through cheese cloth or nut bag and you'll be left with almond meal. Place milk back in blender and add in cinnamon, vanilla and sweetener of choice, (a banana is my favorite) blend until well combined.
Your almond milk will keep 2 to 3 days, though we usually finish it in a day.
Camping is so much better when you have good food to enjoy and homemade almond milk is such a treat!
